Horseradish (Armoracia rusticana)
Horseradish is a perennial plant of the family Brassicaceae. It is a root vegetable, cultivated and used worldwide as a spice and as a condiment. The species is probably native to southeastern Europe and western Asia.
Horseradish Crowns are considered an herb, condiment, stimulant and an excellent source of vitamin C. They contain an enzyme, peroxidase, that is extracted from the roots by the pharmaceutical industry for use by diabetics to test their blood sugar levels.
